Kale and Lentil Pasta

wow I am on a role lately with this whole….actually posting business. If only I was better at taking photos. I had a crazy weekend so I’ve been feeling like something marginally healthy. This was an excellent pre-gaming dish and I totally felt like it helped me at five thirty when I was finally curled in bed. I might have to make it again tonight…and that’s what my weekend is like.

I totally also got this excellent colour of nail polish for super cheap at winners its Essie “under the twilight” and it’s like a dark creamy purple I love it.

Also LOVING Gilmore Girls on Netflix can’t wait till Friends is on there

okay so first step is to cook the lentils till tender with a bay leaf and a halved onion (I had these chunks of onion leftover so I used that)

While the lentils are cooking, boil the pasta. If you’re multitasked enough, make the sauce at the same time. Melt some anchovies into olive oil. Then add the onions and celery and cover till softened. Finally, add the garlic and chili flakes and rosemary and thyme to the oil and keep it going for a bit till it’s nice and fragrant. drain the pasta, and the lentils, add em both to everything else. Toss a few handfuls of baby spinach and kale in there till it wilts. Serve with some grated grana-type cheese (I had Sovrano which is a pretty excellent buffalo and cow’s milk cheese thats a bit differently flavoured than parmesan and a little crystally and just very good in general)
