Sorting Life Out with a Lemon Chicken Veggie Bake


Stupid lemon chicken bake

After years of stalking the food blog world and spending more time than I care to admit perusing cookbooks and food magazines, I’m finally buckling down and writing my first post.

It could be going better.

I don’t know who I’m talking to here so stuff is gonna sound awkward the first roundabout…

I want to share a recipe. I spent the summer working in a hostel in quebec and every night we fed twenty people a homecooked meal. As a 19 year old with a total of a two-week 4-H program’s worth of cooking and baking experience this wasn’t the coolest thing in the world for me at first. This is what I made my last night working before I came home

Lemon Chicken Veggie Bake

Adapted from this lovely dish over at A Duck’s Oven

Mix of bone-in, skin-on chicken thighs and drumsticks (enough for however many you’re feeding)

Potatoes (I used unpeeled new pontiac reds from the garden)

Chopped Onion (However big or small you want)

Broccoli and Cauliflower in bite sized chunks



Pepper and Salt

Lemon Pepper

Mix of fresh or dried herbs (I used basil, thyme, and oregano)


Toss all the veggies (in roughly equal bitesized chunks) with olive oil, half the herbs and spices, and lemon juice. Spread on the bottom of a greased casserole dish. Use the rest of the oil spices and lemon juice to cover the chicken. Slice the lemon in wedges and arrange the chicken and lemon on top of the veggies. Bake for 45 minutes, then broil chicken for a few minutes on either side. Serve with more lemon wedges.

This couldn’t be more easy I forgot like half the ingredients the first time i made it and someone at the table still grabbed my arm, looked deep into my eyes, and told me that “cooking is in your blood”.

Sorry for the awful picture it was ten at night, someone had attacked the chicken with a fork already because nobody else at the place can cook so we have to burn chicken to a crisp otherwise the staff will be thinking everyones gonna get raw meat diseases and keel over right there on the dining table, and all i have right now for photos is an iphone.




This photo is possibly worse but trust me it is sooooo goooooooooood.
